Amazing, Delicious VEGAN Pancakes!

The title says it all. This morning after getting my older two kids off to their first day of school (5th & 2nd grades) and taking my younger boy to the doctor for his  Kindergarten physical, I decided to try my hand at making totally vegan pancakes. They came out AMAZING thanks to VegWeb and user staciejaye‘s recipe, Best Tasting Pancakes Ever! Vegan or Otherwise.

While I did cut all of the ingredients in half (original recipe below) to make a batch small enough for one person, it still came out DELICIOUS! My pancakes tasted BETTER than any store bought, straight out of the box mix. The pancakes came out super fluffy, moist and smelled GREAT! I’ll now indulge myself with a pancake breakfast once a week. 🙂

Now what to eat the other 6 days of the week? LOL 😉

Best Tasting Pancakes Ever! Vegan or Otherwise

Ingredients:
1 cup white all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar
1 teaspoon vanilla
1 egg replacer
1 cup soymilk
2 tablespoons vegetable oil

Directions:
Mix wet ingredients in a medium sized bowl.  Mix dry ingredients in a larger bowl.
Pour wet ingredients into dry – mix well until smooth consistency.
Drop onto medium heat (preheated) pan.  Flip over when each pancake begins to bubble on top.
Serve with vegan buttery spread (if desired) and maple syrup.

My Transition Progress

Well I’m happy to report while it’s been very different for me not consuming food that contain eggs or dairy, I’ve not given up my quest to be a full fledged vegan. I’ve come to grips with the fact that I DO have to change what I’m eating and where to shop.

I’ve come to the conclusion that I need to take this one day at a time… actually two weeks at a time. LOL So I’ve decided to create a menu for myself for the next 2 weeks, so I don’t wind up starving, LOL

Let me just say that my 1st trip to the health food store was SEVERELY unplanned and I spent A LOT of $$ on like 4 items. Not smart AT ALL! To better equip myself, I’ve taken to looking up the vegan food pyramid and starter vegan menus to ensure that I make BETTER informed shopping decisions… Seriously!

Oooh… Oooh…  Ooooh… While on my first trek to the natural food store, I purchased some Follow Your Heart ® Original Veganaise and I had today with my Boca Chik’n Patties and would you know it, it reminds me of a chicken sandwich. It tasted REALLY good but it just didn’t feel right to me…. it’s almost taboo to be eating faux meat. I’m going to finish what I have left and leave it alone. Not only does it not feel right eating the faux meat even though it’s not “real” but it’s the idea of tricking the mind and satiating the need for it. My plan is to expand my menu to let my palate experience Nature’s bounty. 😉

Welcome to My Journey!

Let start by saying thanks for stopping by my blog. The title says it all. I am ready to transition from vegetarianism to veganism which I’ll photo document because I LOVE photography as much as I love eating. LOL

I’d been on the semi-vegetarian (no pig or cow but still ate chicken, turkey and fish) path since 2002 but in August of 2008 is when my interests lead to cut out ALL animal flesh but I continue to eat products with eggs and dairy. I did cut out honey and gelatin. I will be celebrating my 2nd year as a full fledged non-animal flesh eater on August 2nd. Yay me!!

As I get ready to enter into my second year of vegetarianism, I’m noticing that I’m beginning to get adverted to things that contain eggs and dairy too. I guess it’s my body’s way of telling me that it’s time for me to go ahead and take the plunge and go VEGAN! I know this road won’t be easy considering I’m the only vegetarian in my house (I’m married with 4 children – 10, 7, 5 and 3) AND at work. They always look like I’m speaking a foreign language whenever I tell people I’m vegetarian and that I don’t eat animal. They automatically either think that I still eat fish/fowl or vegan.

I plan to begin my official journey on August 2nd, 2010… it’ll more than likely happen before then but that will be my official date.

At first thought that I would purchase a vegan cookbook but have since decided to just use my new iPhone app by VegWeb.com, I mean I have 13,000+ recipes at the tips of fingers. This should be REALLY fun not to mention educational to boot. So sit back and enjoy my journey as much as I will.
